Try this SUPER EASY make ahead salad. It is great to have on hand for a quick lunch during the week or a light dinner if you are eating late. If you are serving this as an entree salad, add shredded chicken – which you can have on hand from a store bought rotisserie, frozen grilled chicken or even canned chicken. This salad would also be great with grilled salmon or thin sliced steak.

- Prepare pasta of your choice. Cooking 5-7 minutes in boiling water with 1 tbsp of EVOO, until tender. Be sure that your water is adequately salted. After cooked, drain reserving 1/4 cup of cooked liquid*.
- Toss cooked pasta with pasta liquid and 1 cup of Greek Dressing. Refrigerate overnight.
- Prepare Romaine Lettuce, Tomatoes, Cucumbers and Onions. Add Feta Cheese
- Combine freshly cut ingredients and Feta Cheese to pasta and toss with remaining Greek Dressing. Garnish with black olives or pepperoncinis.
Notes
If you are adding a protein for an entree salad it may require more dressing or to make it a bit more calorie friendly simply drizzle EVOO over top just before serving!
