Hot Dog Salad!

Teehee-Teehee! Kinda funny right?” But you know I love a salad. Especially when it’s a unique collage of what I have on hand.

I have a lot of work to do as I pursue my passion for this website so eating and posting at the same time is a pretty normal day for me. Time for a “Working Lunch“! In this moment I am tempted to go grab a place in line at the near-by drive thru, but it is rare that I choose to go out because I usually have plenty of food in the fridge. I open the doors of my refrigerator, take a peak inside and see what I can use to make my lunch!

Today I had 2 hot dogs from last night’s cook out, bell peppers and onion mixture from the freezer and the other half of my avocado from breakfast. Romaine lettuce is a staple in my fridge so that provided a good foundation.

This salad was so easy that I chose not to put it in a “recipe” format but to simply explain how I combined the ingredients for this yummy and quite indulgent salad. Hotdogs with sautéed peppers and onions have a heavier taste and texture, which when combined with the lighter ingredients create a well balanced salad.

I used my RADA Cook’s Utility knife to slice the hotdogs on a long angle – this was my attempt to “dress them up” for my elegant working lunch ;)! (I have to mention my RADA cutlery often because they really are such a valuable part of my kitchen!) I added the peppers and onion mixture to the hotdogs and sautéed them in a small amount of grapeseed oil until they began to caramelize. While those were cooking I chopped the romaine and sliced the avocado. I made a bed of lettuce on my plate and laid my avocado on the side. I topped the bed with the cooked hotdogs, peppers and onions. Crumbled feta added another layer of flavor – I used about 2 tablespoons. I dressed the salad with olive oil and balsamic glaze. I salt and pepper salads – some folks don’t – but I do.

This simple “working lunch” was really yummy! I prevented food waste using my leftovers and also saved the cost of the drive thru. Although this dish is a little high in calorie due to the hotdogs but a much better option than the bun and fries especially if you’re like me and had that option the night before!

Look for leftovers in your fridge that if given a makeover could be the star on another plate. Take a moment to reimagine ingredients to make a meal that will satisfy and nourish you! Today my creativity lead me to this… “Hotdog Salad“!
