Feeds my Soul with the Memory and My Belly with Health!
I named these nutritious jewels after the memory of my Maw-Maw who always greeted me with “Mornin’ Glory!”, which made me feel so loved and filled my heart with joy! Having these on hand is a way of ABUNDANCE in the kitchen and in my heart 🙂
This recipe is one I use often and every time it seems to have slight adjustments according to what I have on hand. So as you review this recipe and use it as a starting point feel free to substitute as needed. I prepare these and then can store them in the fridge for a week or in the freezer up to 3 months. The microwave out of the fridge 30-40 seconds or a counter top oven for 15-20 minutes at 350 degrees. Out of the freezer; either thaw in fridge or place in preheated 350 degree oven for 30 minutes.
These Mornin’ Glories are FULL of NUTRITIOUS ABUNDANCE!! Alternative Flours are used and each of them have valuable attributes; healthy fats, low carbohydrate, antioxidants, great flavor, gluten-free, proteins and vitamins. Feta cheese is made from sheep or goat milk. It’s nutritional panel includes; Riboflavin, Calcium, Vitamins B6 & B12, Phosphorus, Selenium and Zinc. The veggies you use in these add lots of vitamins and minerals. The cream cheese is a great source of Short-Chain Fatty Acids which reduce inflammation if your body and is low in lactose for dairy sensitive tummies (less than TWO grams!). Eat these and know that you are feeding your body with good things! You could even name them something that makes you feel loved and joyful!

Ingredients
Method
- Chop and Sauté Veggies
- Chop Greens (Arugula, Spinach, Kale,)
- Mix Dry Ingredients including Seasonings Together
- Add cooked Veggies and Feta, Toss to coat
- Combine Eggs and Whisk well
- Add Cream Cheese to Eggs (combine fully)
- Add Egg Mixture and Tomato Based Acidic to Dry Ingredients
- Place Mixture into Refrigerator for 30 minutes.
- Preheat Oven to 375°Remove Mixture from fridge and place on baking sheet covered with parchment paper. Spoon, Scoop or Form by Hand.
- Bake each pan for 15-20 minutes until browned on top
- Store in fridge for up to 7 days or in freezer for up to 3 months.
