Hero Salmon

I called this Hero Salmon because it is pleasing to the palate, time efficient, highly nutritious and may possibly rescue one’s negative opinion of fish! (as in Steve’s case ;)) It’s easy to prepare and cooks very quickly!

Hero Salmon

How to marinate, season and cook a salmon fillet that is exceptionally nutritious, savory and sweet!

Ingredients
  

  • 4 fillets Salmon Wild Caught is best
Marinate
  • 1 cup Pineapple Juice 100% - no added sugar
  • 1/4 cup Tamari
  • 1 tbsp Rice Wine Vinegar
  • 1 tbsp Fresh Ginger Shaved from root - 2 tbps of ground ginger substitute
  • 1 tbsp Sesame Oil
Seasoning / Rub for Salmon
  • 1/4 tsp Crushed Coriander Seed Can be crushed with side of knife blade or use Ground Coriander
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Paprika
  • 1/2 tsp Turmeric Careful - this spice can stain
  • 1 tsp Ground Cumin
  • 1 tsp Ground Ginger
  • 2 tbsp Ground Chili Powder
  • 2 tbsp Brown Sugar

Method
 

Salmon
  1. If salmon is frozen - remove from packaging, plate and cover. Place in refrigerator for 24 hours until thawed. Once Salmon is thawed remove skin (if present) with a thin blade serrated knife, removing as little of the meat as possible.
Marinate
  1. Place the ingredients for the marinate in a plastic gallon sized zipper bag. Place salmon in bag with marinate and store in fridge for 4 hours. Because of the acidity of this marinate, do not prolong the time to prevent breaking down of the meat.
Season and Cook
  1. Mix all of the spices in a small bowl. Remove the salmon from marinate and blot gently with a paper towel. Cover both sides of each piece of salmon. Coat well. Cook on a flat top or in non stick pan - no oil is needed but you can use spray if you so desire. Salmon cooks very quickly and is best when cooked just to flaky. According to the weight and shape of each fillet cooking time requirements differ. When you can break easily with a fork, it's ready. The fillets used in this recipe cooked 6 minutes on the first side and then 3 minutes after being turned.

Notes

This is a simple and delightful recipe with depths of flavor will please the toughest critic. My hubby says he never ate salmon before because it was too fishy - but he likes this recipe! The nutritional panel for Salmon (make sure it's wild caught) is so good for you, boasting 33 g of protein, healthy fats, amino and fatty acids, vitamins and minerals in just 6 ounces! Even adding it to your diet twice a month is beneficial to your health.
