
This recipe is simple and straight forward. The “stuffing” is prepared separately so it allows you to accommodate children who might not prefer to eat a stuffed bell pepper and just want the meat and veggies. In this case you may want to prepare rice along side the meat as a “bed” for the meat mixture or tossed into the mixture before stuffing the peppers.
The bell pepper choice is all yours. The recipe picture may throw you off a bit because I used the bell peppers that grew in my parent’s garden. These peppers had a mild flavor and were easily made tender. YOU can use what ever peppers you like. Some people prefer the heavy flavor of a green bell, while others may want a sweeter pepper such as the yellow or orange. Red bells fall beautifully in between where the heavy flavor exists balanced out by the sweetness.
Seasonings are also to your liking or your family’s preference. To spice it up add cayenne pepper or chili powder. This will add a little heat to the dish. For more depth, add ground cumin. These spices could be included to the meat or sprinkled on each plate as preference is desired.

Simple Squashy, Beefy, Stuffy Peppers

- Preheat oven to 350 degrees. Line a baking sheet with foil for easy clean up!
- Brown ground beef in pan. Add Ranch Dip powder. Drain and set aside. Heat oil in same pan and saute squash, red onion. When the veggies are almost fully cooked add ground beef back to the mixture. Add any seasoning now that you would like into the mixture. Remove from heat and stir in mozzarella cheese.
- Choose a shallow pan that will hold all whole peppers. Add water to the dish to just cover the base of the peppers. Heat in the microwave for 1 minute. - times may vary - you are looking for the peppers to be softer but not collapsed or mushy. Cut each pepper in half from top to bottom - remove seeds and core.
- Fill each pepper half with the mixture. Garnish with green onions and cheese. Bake in at 350 degrees for 20 minutes.
