The Trinity Chicken Salad

I awoke this morning to some joint pain in my shoulder and hip. I can usually trace my diet back a few days prior and discover that I have either consumed too many carbonated drinks (seltzer water) or surrendered to my sweet tooth too often. For me, these are triggers. Normally I feel great in the mornings right out of bed, but if my joints are sore, I use a few methods to feel better. So what is my #1 method to decrease my pain? FOOD! “Let food be thy medicine and medicine be thy food.” 

Here comes the recipe, in it I use what I lovingly call The Anti-Inflammatory Trinity: Ginger, Turmeric and Garlic. These nutrients are known super foods that reduce inflammation, therefore relieving pain and as a super bonus reduces disease. The attributes of these three go on and on; providing support to your entire body! Today I will focus on this recipe, consume the trinity super foods and will watch my diet closely for the next few days to allow my body to heal itself. You gotta try this recipe both for health and flavor – it’s delicious!

The Trinity Chicken Salad

Full of ingredients that will decrease inflammation and do your body good!

Ingredients
  

  • 1 cup Chicken, cooked and chopped Great use of leftover cooked chicken
  • 1/2 cup Celery, rib and leaves, chopped Include the leaves - they add flavor
  • 1 1/2 tbsp Mayonnaise
  • 1/2 tbsp Horseradish Mustard Or Brown Mustard (I like the extra kick)
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Minced Garlic Or Garlic Powder
  • 1 tsp, each Ginger and Turmeric, freshly grated from root Ground spices can be used in place of fresh
  • 1 tbsp Hemp Hearts
  • Sliced Pickled Ginger To taste (I like A LOT)
  • Raisins Adds some sweet flavor - you choose how many
  • Freshly Ground Black Pepper To taste

Equipment

  • RADA Chef's Knife
  • Cutting Board
  • Measuring Spoons / cups

Method
 

  1. Prepare the Chicken and Celery
  2. Mix the next 6 ingredients together in a bowl
  3. Add Chicken and Celery, mix well
  4. Garnish with remaining ingredients to taste
  5. Enjoy!

Notes

Just a few thoughts.....

Turmeric (fresh or ground) contains natural color pigments that can stain. Be mindful of clean up with towels or aprons.

Any of the ingredients can be increased for flavor. I use the trinity of Ginger, Turmeric and Garlic often. These three ingredients can be added into recipes anytime to increase nutrition and decrease inflammation in the body.

Although when I prepared this recipe I just ate the mixture; this recipe can be served on top of a bed of lettuce, cold cooked grains or wild rice. Nut and seed crackers are also a nice compliment to this dish.
